Since getting more involved in the cooking scene, my YouTube page has been flooded with really cool recipes and techniques. It's been so amazing watching so many talented bakers and chefs around the world. I've definitely been inspired.
I actually happened across this recipe entirely by accident, but I just had to share it because it's such a fun idea. And, for how beautiful this cake looks, it doesn't seem that prohibitively difficult. You can find a bunch of videos online that walk you through the steps, but I just had to spotlight @emmymadeinjapan, since she's the one who initially introduced me to this concept.

So, my plan is to make this as part of a larger Polynesian recipes and culture highlight, which I will be planning out over the next couple days. I'll be deviating slightly from Emmy's process, since gelatin is an animal-based product. So, I'll be substituting agar agar powder for the "ocean water", sweetened with mango and pineapple juice.
